The invention of the modern chocolate bar
The breakthrough was mechanical. In 1828 a Dutch chemist invented a press that separated cocoa butter from the beans, and in 1847 the English firm J.S. Fry & Sons recombined cocoa powder, sugar, and cocoa butter into the first moldable eating chocolate. In 1875 Daniel Peter and Henri Nestlé added condensed milk to create milk chocolate. Everything since has been refinement.
