Almost Burnt, and the Bottom of the Pot

There is a moment in caramel where you have to decide whether to trust yourself. The sugar has gone past golden. Dark at the edges, the smell in the kitchen has shifted from sweet to something closer to toast, and every instinct says pull it now. You wait another beat. Not burnt. Almost burnt. That last thirty seconds is where the bitterness comes in and holds the sweetness down so it doesn't float away.

That caramel is the backbone of our Crunchy Gianduja. Gianduja is the old Piedmontese idea of hazelnut and chocolate ground together until they are one thing instead of two. What makes ours crunchy is feuilletine — which sounds fancier than it is. Feuilletine is crêpes dentelles, those paper-thin lacy French wafer cookies, baked and crushed into shards. You fold them in and they shatter under your teeth. Almost burnt caramel, hazelnut, milk chocolate, and that shatter.

ONE PIECE OF THE CRUNCHY GIANDUJA

How many cultures found their way to the exact same place gets me. Scorched rice at the bottom of the pot was almost certainly a mistake the first time. Somebody left the pan too long, went to scrape it out, and tasted it instead. At the bottom of a paella it's called socarrat. In Korea it's nurungji — the crisp golden layer people scrape up and eat as a snack or pour hot water over and drink. In Iran it's tahdig, and this is the part that really gets me, because tahdig is often served entirely on its own. The thing that was a mistake became the piece everyone reaches for first.

We are all chasing the same two notes. A little bit of scorch — bitterness where you expected sweetness. And crunch, which is the sound your food makes when it's doing something interesting. Put them together and something in us pays attention. Every time.

The Crunchy Gianduja is our bottom of the pot. It's not an accident, exactly, but built on the same instinct that told a cook in Valencia to keep scraping. We take the caramel one shade further than is comfortable, we fold in something that shatters, and we hope you notice.
