Title

In 2018, Lance Eaker took his Uvalde, Texas roots and his wife Boo's Korean heritage and created something new: Central Texas barbecue with a mesquite smoke twist and sides that nobody else in Fredericksburg is doing.

 

They started with a food truck in Houston. In 2020, they made the leap to Fredericksburg and opened a brick-and-mortar on Main Street. They've been selling out ever since.

Why We Recommend Eaker Barbecue

The brisket: Often called the best in the Hill Country. Slow-smoked prime beef with a mesquite-kissed bark.

The Korean influence: Boo's heritage shows up in the sides and sauces—flavors you won't find at typical Texas BBQ joints.

They sell out: Eaker opens at 11 AM and closes when the meat is gone. This usually means early afternoon. If you want it, arrive before noon.

The story: A husband-wife team that took a chance, moved their family, and built something real. You taste the passion in every bite.

The Catch: They Sell Out

Eaker opens at 11:00 AM Wednesday through Sunday. They close when the meat is gone—often by 2:00 or 3:00 PM. If barbecue is a priority, plan to arrive before noon.

Before or After Your Tasting

Before (recommended): Arrive at Eaker by 11:30 AM, eat barbecue, then head to Hill Country Chocolate for a 2:00 PM tasting.

After: If you book a morning tasting at Hill Country Chocolate, check whether Eaker still has meat when you arrive downtown (usually by 2:00 PM they're close to sellout).
