Grandmama Marie's Favorites: My 93-Year-Old Mom's Chocolates

Mother's Day is almost here, and I've been thinking about my mom.

We call her Grandmama Marie. She's 93 years old, still lives on her own in Hico, Texas, still drives herself wherever she needs to go, and still meets her girlfriends for lunch several times a week. She is, in every sense of the word, remarkable.

And she loves our chocolates. Two in particular.

The first is our almond butter toffee — that snap of caramelized butter and sugar, the crunch of roasted almonds, all wrapped in chocolate. She's been eating it for years and never tires of it.

The second is our caramel pecan clusters, which she has always called turtles. Every time I bring her a box, her eyes light up the same way they did the first time. She doesn't eat them all at once — she spaces them out over several days, savoring each one. That's how you know someone truly appreciates what they're eating.

What Goes Into Grandmama Marie's Turtles

Every time we make a batch of caramel pecan clusters, I think about my mom. Because the effort we put into these — the care at every step — is the kind of effort you want behind anything you give to someone you love.

It starts with the pecans. We par-cook them in a light sugar solution for two to three minutes, then roast them for an hour and fifty minutes across multiple temperature stages. That slow, patient roasting is what develops the deep, toasted flavor and the crunch that makes these clusters what they are. There's no shortcut for it.

Then comes the caramel. We cook heavy cream, sugar, glucose, and evaporated milk in small batches, stirring constantly, watching the temperature climb to exactly where it needs to be. The caramel has to be firm enough to hold the pecans but soft enough to give way when you bite into it. Getting that balance right is something our team has spent years perfecting.

And finally, the chocolate — Swiss chocolate, some of the best in the world. We temper it carefully so it sets with a clean snap and a glossy finish, then enrobe each hand-formed cluster. The result is a confection with real depth: the buttery pull of caramel, the crunch of perfectly roasted pecans, and the smooth, rich finish of quality chocolate.

That's a turtle I'm proud to give to my mom. And she certainly enjoys eating them.

What Mom Taught Me About Chocolate

Grandmama Marie didn't teach me how to temper chocolate or roast pecans. But she taught me something more important — that the things worth having are the things someone put real care into. A home-cooked meal. A handwritten note. A box of chocolates where every piece was made by hand, not stamped out on a factory line.

When I watch her open a box of our clusters and set them on her kitchen counter, carefully choosing which one to have with her afternoon coffee, I'm reminded of why we do what we do. It's not about volume or efficiency. It's about making something good enough to share with the people who matter most.
