One of the things I get genuinely excited about in this work is being surprised by my own team.
I've been making chocolate and confections for a long time now, and there's a rhythm you settle into. You learn the recipes, you refine the techniques, you develop opinions about how things should look and taste. And that's fine—that's craft. But every once in a while, someone on the team does something you didn't see coming, and it stops you in your tracks.
That happened recently with our pecan brittle.
The Way We've Always Done It
Our pecan brittle has been a holiday staple for years. We've always used pecans that we slice into thin slivers before the cook. There's a good reason for that—when you pour the hot sugar onto the marble and pull it by hand, those slivers lay flat and catch the light through the amber candy. So imagine my reaction when I walked into the factory and found the team had sourced a batch of whole mini pecans from Durham's in Comanche, Texas—and made an entirely new batch of brittle with them.
Nobody asked me. Nobody ran it by the old chocolatier. They just did it.
And it was stunning.
These pecans from Durham's are small enough to stay whole in the brittle, but substantial enough that they roast completely during the cooking process. When the sugar hits the right temperature and you pull the brittle across the table, these whole pecans settle flat against the surface. Every single one perfectly roasted, nestled in dark amber candy that's been pulled thin enough to snap clean.
The flavor was extraordinary. There's something about a whole roasted pecan that a sliver just can't replicate. The oils stay sealed inside until you bite through, so you get this burst of rich, toasty pecan flavor right at the center of every piece. Layered over the buttery caramel of the brittle itself, it was one of the best things we've made.

Durham's has been growing pecans in Comanche for generations. That part of Texas—the rolling country between the Hill Country and West Texas—produces some of the finest pecans in the world. The soil, the climate, the care that goes into those orchards. You can taste it.

I'll be honest: my first instinct when I see something different is to ask why we changed it. That's the craft brain talking. But the lesson here—and this is a real lesson in chocolate, not just a blog title—is that sometimes the best thing a chocolatier can do is get out of the way.
My team saw something I didn't. They recognized that whole mini pecans would transform the brittle from something beautiful into something breathtaking. They trusted their instincts, they found a great local source, and they executed it flawlessly.
That's not just good candy-making. That's innovation. And it happened because I have people around me who care as much about what we make as I do.
