A Guide to the Perfect Chocolate Shake

Most people start a chocolate shake recipe the same way. Vanilla ice cream. Chocolate syrup. Blend.

That is not a chocolate shake. It is a vanilla shake with brown in it.

Hill Country Chocolate makes bars in Fredericksburg, Texas. We do not sell shakes. This is how to make a chocolate shake at home so it tastes like chocolate, not a packet. Most chocolate milkshakes fail because the chocolate never really mixes.

Why the chocolate matters

Three ways to get chocolate into a shake: syrup, cocoa powder, or a melted bar. They are not the same drink.

Syrup is mostly sugar. First ingredient is usually corn syrup or sugar. Chocolate shows up later. You get sweet and brown.

Cocoa powder is a real option. The solids, with the cocoa butter pressed out. Pigment and tannin. A cocoa powder chocolate milkshake is darker and sharper. The fat is gone. You feel that.

A melted bar brings solids, cocoa butter, and the sugar already set against the cacao. The fat slows the flavor down. You taste the bar longer.

Syrup is the weakest choice. Cocoa is a path if you mean it. The bar is the fullest version.

How to make a chocolate shake

Do not dump everything in the blender at once. Cold ice cream, cold milk, and a squeeze of syrup never really mix. The chocolate sits in streaks.

Melt the chocolate first. That is how to make a chocolate milkshake that tastes like the chocolate you used.

  1. Chop 1 to 1.5 ounces of real chocolate. Dark or milk.
  2. Warm 2 tablespoons of milk. Not boiling.
  3. Stir the chocolate in until smooth. Cool to room temperature.
  4. Put 2 scoops of ice cream and 1/3 cup cold milk in the blender.
  5. Pour in the cooled chocolate.
  6. Blend until smooth. Drink it now.

The warm-milk step is two minutes. It is the difference between a homemade chocolate shake and sweetened milk.

A chocolate shake and a smoothie are not the same drink. A milkshake is ice cream and milk, blended. A smoothie is fruit and liquid. No ice cream. If you want a thick chocolate milkshake, stay with ice cream.

Classic chocolate milkshake recipe

The classic chocolate milkshake recipe. One serving.

Ingredients

  • 1 to 1.5 ounces dark or milk chocolate (a bar you would eat; the 290 Bar, 56% Colombia, works if you have it)
  • 2 tablespoons whole milk, warmed
  • 2 scoops vanilla ice cream (about 1 cup)
  • 1/3 cup cold whole milk

Method

  1. Chop the chocolate small.
  2. Stir it into the warm milk until melted. Cool.
  3. Ice cream and cold milk in the blender.
  4. Add the cooled chocolate.
  5. Blend 20 to 30 seconds.
  6. Pour. Drink.

Vanilla ice cream stays out of the way. Chocolate ice cream works, but it can crowd a bar that already has a lot to say.

Cocoa powder chocolate milkshake

Cocoa makes a different shake, not a worse one. No cocoa butter, so the hit is sharper up front. Less round. If you want darker and less sweet, this is the one.

Ingredients

  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon sugar
  • 3 tablespoons warm milk
  • 2 scoops vanilla ice cream (about 1 cup)
  • 1/3 cup cold whole milk

Method

  1. Whisk cocoa and sugar into the warm milk until there are no lumps.
  2. Cool.
  3. Ice cream and cold milk in the blender.
  4. Add the cooled cocoa mixture.
  5. Blend. Taste. Add sugar only if you need it.

Dry cocoa dumped into a cold blender turns into a cloud, then a streak on the jar. Dissolve it first.

Chocolate malt milkshake

A chocolate malt milkshake is the classic plus malted milk powder. That powder is malted barley, wheat flour, and milk solids. Slightly nutty. It sits well next to a darker bar.

Ingredients

  • 1 to 1.5 ounces dark or milk chocolate
  • 2 tablespoons whole milk, warmed
  • 2 scoops vanilla ice cream (about 1 cup)
  • 1/3 cup cold whole milk
  • 2 tablespoons malted milk powder

Method

  1. Melt the chopped chocolate into the warm milk. Cool.
  2. Ice cream, cold milk, and malted milk powder in the blender.
  3. Add the cooled chocolate.
  4. Blend until smooth.
  5. Drink now.

The powder goes in with the cold ingredients. It dissolves.

Chocolate peanut butter shake

Natural peanut butter, the kind you stir, blends cleaner than the stiff supermarket kind.

Ingredients

  • 1 to 1.5 ounces milk or dark chocolate
  • 2 tablespoons whole milk, warmed
  • 2 scoops vanilla ice cream (about 1 cup)
  • 1/3 cup cold milk
  • 2 tablespoons natural peanut butter

Method

  1. Melt the chopped chocolate into the warm milk. Cool.
  2. Ice cream, cold milk, and peanut butter in the blender.
  3. Add the cooled chocolate.
  4. Blend until smooth. If it is too stiff, a splash more milk.
  5. Drink now.

Milk chocolate softens the peanut butter. Dark chocolate sharpens it. Pick the bar you want to taste.

Notes that actually matter

A regular blender is enough. The jar should be cold. A warm jar melts the ice cream before the blade turns.

Pull the ice cream 5 minutes before you blend. Not 30. Soft enough to blend, not soft enough to pour. A thin shake does not get thick again.

Do not pour hot chocolate into a blender full of ice cream. The melted chocolate should be room temperature. Hot liquid makes soup.

Two scoops to 1/3 cup milk is thick. Thin it with a splash and blend again. You cannot go the other way.

Whole milk holds the cocoa butter. Skim works. The shake is thinner and the chocolate reads sharper.

A homemade chocolate shake is a use for the bar. The glass tastes like what you put in it. Put in a bar you would eat.
