Three bananas went black on the counter. That is where this loaf starts.
Hill Country Chocolate is a chocolate shop at 144 Industrial Loop in Fredericksburg, Texas. We do not sell banana bread. This banana bread recipe is the one we make at home. One bowl. Pantry staples. One 9x5 loaf.
A yellow banana is mostly starch. The peel goes spotted, then dark, and that starch turns to sugar. Extra sugar in the bowl will not fix a yellow banana. The mash has to be sweet enough to carry the loaf.
What makes a moist banana bread recipe
Most people treat banana bread as a spice problem. More cinnamon. More vanilla. More sugar. The fruit has to come first.
Use bananas with a spotted or black peel. They mash soft. They taste like banana, not like a pale cake. If the peel is still yellow, wait or freeze them and thaw later. The thawed fruit looks ugly. The mash is what you want.
The second thing that dries a loaf is the spoon. Banana bread is a quick bread. Stir after the flour goes in and gluten builds. The crumb goes tight. Mix until the dry flour disappears. Then stop.
The third thing is the oven. A clean toothpick means you waited too long. Pull the loaf when the toothpick still has a few moist crumbs. The center finishes in the pan.
Brown sugar belongs here more than white. It dissolves into the mash. The molasses sits with the banana instead of on top of it.
Best practices for the best banana bread recipe
Wait for the spotty peel. Yellow bananas do not mash. They are not sweet enough to carry the loaf. Go black-spotted, or at least mostly brown. If you are working ahead, peel yellow bananas and freeze them. Thaw on the counter until they are completely soft.
Mash until it looks like thick applesauce. Fork, masher, or your hands. A few small pieces are fine. Big chunks go gummy in the oven.
Spoon and level the flour. A cup scooped from the bag can hold a lot more flour than a cup you fill with a spoon and level with a knife. Extra flour makes a dry loaf.
Mix until just combined. Streaks of flour are fine. Once flour meets liquid, every extra stir builds gluten. Fold. Get out of the bowl.
Use a 9x5 loaf pan. An 8x4 holds the same batter and runs taller. The center takes longer. The 9x5 bakes more evenly.
Bake at 350°F. Higher heat sets the crust before the middle is done.
Pull at the first moist crumb. A few wet crumbs on the toothpick. Not a dry stick.
Rest 10 minutes in the pan. Then run a knife around the edge and tip the loaf onto a rack.
That is the best banana bread recipe method we use. The rest is the batter.
Easy banana bread recipe
This is a straightforward easy banana bread recipe. Everything in it lives in a standard pantry.
Makes one 9x5 loaf.
Ingredients
- 3 very ripe bananas (about 1 1/4 to 1 1/2 cups mashed)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup unsalted butter, melted and slightly cooled
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream or buttermilk (optional, for a softer crumb)
Method
- Heat the oven to 350°F. Grease a 9x5 loaf pan.
- Mash the bananas in a large bowl until smooth.
- Whisk in the melted butter, then the brown sugar, then the eggs one at a time, then the vanilla. Add sour cream or buttermilk if you are using it.
- Add the flour, baking soda, and salt. Fold with a spatula until the dry flour disappears.
- Pour the batter into the pan. Tap the pan once on the counter.
- Bake 55 to 65 minutes, until a toothpick in the center comes out with a few moist crumbs.
- Cool in the pan 10 minutes. Turn onto a rack.
No mixer. No sifting.
The batter should fall off a spoon in a slow ribbon. If it pours like pancake batter, you have too much banana or not enough flour.
Banana nut bread, chocolate chip banana bread, and muffins
Same batter. Add-ins go in at the end so they do not sink.
Banana nut bread. Fold in 1/2 to 3/4 cup chopped walnuts or pecans with the flour. Toast the nuts at 350°F for 8 minutes first if you have time. Same bake.
Chocolate chip banana bread. Fold in 1/2 to 3/4 cup chocolate chips just before the pan. Semi-sweet or dark chips keep their shape. The chips cut the soft banana. This is a home add-in, not something we sell as a loaf.
Chocolate banana bread. Swap 1/4 cup of the flour for unsweetened cocoa. Or skip the cocoa and fold in 3 ounces of chopped dark chocolate. A chopped bar melts cleaner than baking chips. Our 290 Bar (56% Colombia) works if you have one from the shop. Optional.
Banana bread muffins. Same batter. Line a 12-cup tin. Fill each cup about two-thirds. Bake at 350°F for 18 to 22 minutes. Check at 18. Same crumb test.
Notes that actually matter
Freeze the bananas you will not bake this week. Peel them. Bag them. They thaw in about an hour on the counter and mash clean. The skins go black in the freezer. That is fine.
Wrapped, the loaf keeps two days on the counter, a week in the fridge, three months in the freezer. A day-old slice, toasted, with butter, is the one we eat.
People search healthy banana bread. We are not going to call this loaf that. It has butter, eggs, and sugar. Ripe bananas bring enough sweetness that you do not have to pile more on top. That is the only claim.

We make chocolate. We do not bake banana bread for the case.
The three bananas nobody ate last week are the right bananas. Mash them. Fold the batter once or twice. Pull the loaf at the first moist crumb.
