How we make these products

Every bonbon in this collection starts with premium cacao and ends with a hand-painted finish that makes each piece a small work of art. Our chocolatiers work in small batches at our Fredericksburg, Texas factory, building each bonbon layer by layer. The ganache centers are piped by hand, allowed to set overnight, then enrobed in tempered chocolate and finished with colored cocoa butter designs that identify each flavor.

This 9-piece collection represents our customers' favorite flavors, selected through years of tastings and feedback. The flavor profiles draw from Texas terroir and global influences—Rio Grande Valley oranges, Okinawan black sugar, and Hill Country peaches all make appearances alongside classic combinations like blackberry and mint.

How We Make Each Bonbon:

  • Hand-painted polycarbonate molds receive multiple layers of colored cocoa butter before the chocolate shell is added
  • Ganache fillings are made fresh using heavy cream, real butter, and natural fruit purees—no artificial flavors or extracts
  • Each bonbon is unmolded by hand and inspected for quality before packaging
  • Our tempering process creates the signature snap and glossy finish that marks well-made chocolate
  • Small-batch production (typically 200-300 bonbons per flavor run) allows for quality control at every step
  • The entire process from ganache to finished bonbon takes 48-72 hours

Product FAQs

How should I store artisanal bonbons?
Keep bonbons in a cool, dry place between 60-68°F. A wine refrigerator works well if your home runs warm. Avoid regular refrigerators—the humidity and food odors can affect the chocolate. If you must refrigerate, seal the box in an airtight container and let the bonbons come to room temperature for 15-20 minutes before eating.

What is the shelf life of the 9-piece bonbon collection?
Our bonbons stay fresh for 3-4 weeks from the production date when stored properly. The cream-based ganache centers are what limits the shelf life. You'll find a "best by" date on each box. The flavors are most vibrant in the first two weeks.

Are these bonbons good for gifting?
Yes—this collection is one of our most popular gifts. The variety of nine flavors means there's something for every palate. The presentation box is designed to look elegant without additional wrapping. We can include a handwritten gift note, and the box ships well with our insulated packaging.

What wine pairs well with these bonbons?
For the fruit-forward bonbons (Prickly Pear, Peach Yogurt, Cinnamon Green Apple), try a late-harvest Riesling or sparkling Moscato. The Mexican Hot Chocolate pairs beautifully with a bold Texas Tempranillo or Zinfandel. The Okinawan Sugar Drop with Coffee Ganache stands up to a tawny port. When we host wine pairings at our tasting room with DKM Cellars, these are combinations guests request again and again.

What's the best way to taste these bonbons?
Let each bonbon sit at room temperature for a few minutes. Bite it in half to see the ganache center and let it melt slowly on your tongue. The flavors develop as the chocolate warms. Try working from lighter flavors (Peach Yogurt, Cinnamon Green Apple) to darker, more intense ones (Mexican Hot Chocolate, Coffee Ganache).

Can I order specific flavors instead of the signature collection?
Yes. Our Build Your Own Box option lets you select individual flavors. The 9-piece signature collection is curated based on customer favorites, but we make over 20 rotating bonbon flavors throughout the year.
