How we make these products

We make each of our four signature toffees using the traditional English method of cooking butter and sugar to exactly 300°F—the hard crack stage—which creates that distinctive snap when you bite into it. For our Milk and Dark Chocolate varieties, we pour the molten toffee onto a cooling table to cool into thin, even layers before cutting and enrobing each piece in tempered Felchlin Swiss chocolate. The Pecan Toffee gets Texas native pecans folded directly into the hot toffee mixture before spreading.
Each batch requires constant stirring over medium heat for 15-20 minutes as the butter and sugar transform from grainy slurry to smooth, amber perfection—we watch for the color of honey and the scent of toasted caramel that signals readiness. After the chocolate sets in our tempering room at precisely 65°F, we hand-pack each variety.

Hill Country Chocolate sources our butter from Texas dairies and uses pure cane sugar rather than corn syrup, which gives our toffee a cleaner sweetness and more complex caramelization. A: All four toffees are gluten-free. Three varieties (Milk, Dark Chocolate, and Pecan, Almond). Each toffee is individually wrapped to prevent cross-contamination between flavors. Almonds and Pecans are very present and are not safe for those with nut allergies.
