Indulge in a luxurious treat that marries the crunch of pecans with the smoothness of caramel, all wrapped in velvety dark chocolate.

Each cluster is a blend of textures and flavors, starting with Texas native hard-shell pecans sugar roasted to perfection to enhance their nutty flavor. These are then draped in a luscious, golden caramel that's cooked to just the right temperature for a perfect, gooey richness.

The caramel-nut foundation is enrobed in a thick coat of premium Swiss dark chocolate, which provides a divine contrast with its slightly bitter notes and sumptuous melt-in-your-mouth quality.

Crafted with care and designed to delight, these clusters are the perfect confection for those who appreciate the finer things in life.

How we make these products

Pecan clusters—sometimes called "turtles" in other parts of the country—are a Southern confectionery tradition, and ours pay homage to that heritage while elevating every element. We start with Texas native hard-shell pecans, which have a richer, more concentrated flavor than the softer varieties grown elsewhere. The pecans are sugar-roasted to bring out their natural oils and deepen that toasty, nutty character before anything else touches them.

The roasted pecans get draped in our house-made caramel, cooked to a precise temperature that yields gooey richness without becoming too soft or too firm. We cluster the caramel-coated pecans by hand, then enrobe each piece in a generous coat of Felchlin Swiss dark chocolate. The dark chocolate provides a slightly bitter counterpoint that keeps the sweetness in check and adds sophistication to what might otherwise be a straightforward candy. Each cluster is a study in contrasts—crunchy nuts, chewy caramel, and smooth chocolate that melts cleanly on the tongue.

How We Make Our Pecan Clusters:

  • Texas native hard-shell pecans are sugar-roasted to enhance their natural nutty flavor and add light caramelization
  • House-made caramel is cooked to the precise temperature for gooey texture that binds the pecans without becoming sticky or pulling teeth
  • Pecans and caramel are hand-clustered into irregular, rustic shapes—no two pieces are identical
  • Each cluster is fully enrobed in premium Felchlin Swiss dark chocolate, not just drizzled or partially dipped
  • The dark chocolate coating is tempered for proper snap, gloss, and shelf stability
  • Simple ingredients with no artificial flavors: pecans, sugar, cream, butter, and real chocolate

Product FAQs

How should I store pecan clusters?
Store in a cool, dry place between 60-70°F. An airtight container prevents the chocolate from absorbing odors and protects the pecans from going stale. Avoid refrigeration if possible—condensation can cause chocolate bloom and soften the roasted pecans. If your home is warm, a wine refrigerator set to 55-60°F works well.

What is the shelf life of Dark Chocolate Caramel Pecan Clusters?
Properly stored, our pecan clusters stay fresh for 4-6 weeks. The roasted pecans will eventually lose their crunch if exposed to humidity, so keeping them sealed is important. Check the "best by" date on your package for guidance.

Are pecan clusters a good gift?
Yes—pecan clusters are one of our most popular gift items because they combine familiar flavors in a premium format. They appeal to a wide audience, from traditionalists who grew up with Southern candy to chocolate lovers who appreciate quality ingredients. The rustic, hand-formed appearance signals artisan craftsmanship, making them appropriate for both casual and elegant gifting occasions.

What wine pairs well with dark chocolate pecan clusters?
The nutty, caramel notes pair beautifully with fortified wines like tawny port, oloroso sherry, or Madeira. For Texas Hill Country wines, try a bold Tempranillo or Mourvèdre—the tannins complement the dark chocolate while the fruit notes echo the caramel sweetness. A late-harvest Viognier also works if you prefer white wine with your chocolate.

What's the difference between pecan clusters and turtles?
They're essentially the same confection. "Turtle" is a trademarked name that became generic over time, referring to the shape—a mound of nuts and caramel that supposedly resembles a turtle shell with legs poking out. We call ours clusters, but the concept is identical: roasted pecans, caramel, and chocolate in one bite-sized piece.

Why use Texas pecans instead of other varieties?
Texas native hard-shell pecans have a more intense, concentrated flavor than the larger, softer pecans grown in other states. The smaller size means a higher ratio of flavorful oils to bland nut meat. Sugar-roasting brings out these natural characteristics even further. It's a nod to our Texas Hill Country roots and a genuine quality difference you can taste.
