How we make these products

We make our almond butter toffee by cooking butter and sugar to exactly 300°F—the hard crack stage—stirring constantly with a heavy-bottomed copper kettle that distributes heat evenly. At this temperature, the sugar caramelizes and the butter browns, creating those deep butterscotch notes that define proper toffee.

We pour the molten toffee onto a cooling table in our Fredericksburg kitchen, spreading it thin while it's still workable, then score it into bite-sized rectangles before it fully sets.

Once cooled, each piece gets enrobed in our signature milk chocolate—a blend of 38% cacao with whole milk powder that melts smoothly on the tongue. The finished toffee has that characteristic snap when you bite through the chocolate layer, followed by the shatter of buttery toffee that dissolves into caramel sweetness.

How to Enjoy

Store at room temperature in a cool, dry place—never refrigerate, as moisture will make the toffee sticky. Pairs beautifully with coffee or bourbon, and the bite-sized pieces make perfect after-dinner treats.

Product FAQs

Q: Does the Milk Chocolate Almond Butter Toffee contain gluten or other allergens?
A: This toffee is gluten-free but contains tree nuts (almonds), milk, and soy. The milk chocolate coating includes whole milk powder and soy lecithin, while the toffee base contains butter. Hill Country Chocolate processes all products in a facility that handles various nuts and dairy.

Q: How should I store the almond butter toffee to keep it fresh?
A: Store your toffee in a cool, dry place between 60-70°F in an airtight container. Humidity is toffee's enemy—it will make the candy sticky and lose its signature crunch. In Texas heat, a pantry or wine fridge works better than regular refrigeration, which can cause condensation.

Q: Can I ship Milk Chocolate Almond Butter Toffee as a gift during summer?
A: Hill Country Chocolate ships with temperature-controlled packaging when needed. We recommend expedited shipping during Texas summers (May-September) to ensure the milk chocolate arrives intact.

Q: What pairs well with milk chocolate almond toffee?
A: The buttery, caramelized flavors pair wonderfully with coffee, especially medium roasts that echo the nutty notes. For wine, try a cream sherry or tawny port. The sweetness also balances beautifully with black tea or a glass of cold milk for a classic combination.

Q: What makes Hill Country Chocolate's toffee different from grocery store versions?
A: We make our toffee in small batches in Fredericksburg, Texas, cooking butter and sugar to exactly 300°F for perfect crunch. Real butter (not margarine) creates the rich flavor, while fresh-roasted almonds add texture throughout—not just sprinkled on top.

Q: Why does the toffee sometimes have white spots on the chocolate?
A: Those white spots, called "bloom," occur when chocolate experiences temperature changes. It's purely cosmetic and doesn't affect taste or safety. The toffee underneath remains perfectly crunchy. This natural occurrence actually indicates real chocolate without stabilizers that prevent blooming.
