Each marshmallow is hand-dipped and fully enrobed in premium dark chocolate made from cacao, sugar, and cocoa butter, creating a thick chocolate shell that gives way to the soft, pillowy center.
The marshmallow base is whipped to achieve that classic melt-in-your-mouth texture, incorporating just enough air to make it light without being insubstantial. After the marshmallows set and cure, we temper our dark chocolate to exactly 88-90°F, ensuring a glossy finish and satisfying snap when you bite through the coating. Each piece is dipped by hand, allowing excess chocolate to drip away before the marshmallow is placed on parchment to set—a process that takes patience but results in a perfectly balanced ratio of chocolate to marshmallow in every bite.
