How we make these products

Pecan clusters—sometimes called "turtles" in other parts of the country—are a Southern confectionery tradition, and ours pay homage to that heritage while elevating every element. We start with Texas native hard-shell pecans, which have a richer, more concentrated flavor than the softer varieties grown elsewhere. The pecans are roasted to bring out their natural oils and deepen that toasty, nutty character before anything else touches them.

The roasted pecans get draped in our house-made caramel, cooked to a precise temperature that yields gooey richness without becoming too soft or too firm. We cluster the caramel-coated pecans by hand, then enrobe each piece in a generous coat of Felchlin Swiss milk chocolate. The milk chocolate adds a layer of creamy sweetness that harmonizes beautifully with the buttery caramel and toasted nuts—each element enhancing the others rather than competing. The result is an indulgent, approachable confection with satisfying contrasts of texture: crunchy pecans, chewy caramel, and smooth chocolate that melts on the tongue.

How We Make Our Pecan Clusters:

  • Texas native hard-shell pecans are roasted to enhance their natural nutty flavor and bring out their oils
  • House-made caramel is cooked to the precise temperature for gooey texture that binds the pecans without becoming sticky or pulling teeth
  • Pecans and caramel are hand-clustered into irregular, rustic shapes—no two pieces are identical
  • Each cluster is fully enrobed in premium Felchlin Swiss milk chocolate, not just drizzled or partially dipped
  • The milk chocolate coating is tempered for proper snap, gloss, and shelf stability
  • Simple ingredients with no artificial flavors: pecans, sugar, cream, butter, and real chocolate

Product FAQs

How should I store pecan clusters?
Store in a cool, dry place between 60-70°F. An airtight container prevents the chocolate from absorbing odors and protects the pecans from going stale. Avoid refrigeration if possible—condensation can cause chocolate bloom (white streaks) and soften the roasted pecans. Milk chocolate is more sensitive to heat than other varieties, so keep clusters away from warm spots. A wine refrigerator set to 55-60°F is ideal if your home runs warm.

What is the shelf life of Milk Chocolate Caramel Pecan Clusters?
Properly stored, our pecan clusters stay fresh for 4-6 weeks. The roasted pecans will eventually lose their crunch if exposed to humidity, so keeping them sealed is important. Check the "best by" date on your package for guidance.

Are pecan clusters a good gift?
Yes—pecan clusters are one of our most popular gift items because they combine familiar flavors in a premium format. The milk chocolate version has especially broad appeal, working for everyone from kids to adults who prefer sweeter, creamier chocolate. The rustic, hand-formed appearance signals artisan craftsmanship, making them appropriate for both casual and elegant gifting occasions.

What wine pairs well with milk chocolate pecan clusters?
The creamy milk chocolate and buttery caramel pair beautifully with lighter dessert wines. Try a Moscato d'Asti, late-harvest Riesling, or cream sherry. For Texas Hill Country wines, an off-dry Viognier or sparkling Blanc du Bois complements the sweetness without overwhelming the delicate milk chocolate. If you prefer red, a fruit-forward Merlot or lighter Grenache works nicely.

What's the difference between pecan clusters and turtles?
They're essentially the same confection. "Turtle" is a trademarked name that became generic over time, referring to the shape—a mound of nuts and caramel that supposedly resembles a turtle shell with legs poking out. We call ours clusters, but the concept is identical: roasted pecans, caramel, and chocolate in one bite-sized piece.

Why use Texas pecans instead of other varieties?
Texas native hard-shell pecans have a more intense, concentrated flavor than the larger, softer pecans grown in other states. The smaller size means a higher ratio of flavorful oils to bland nut meat. Roasting brings out these natural characteristics even further. It's a nod to our Texas Hill Country roots and a genuine quality difference you can taste.
